Thai Chicken Satay Bowl a la Habibi’s. Our Thai Chili Cashew Hummus has all the flavours to make a perfect partner to almost anything. With the base of our Lebanese style hummus we added cashews, chili powder, fresh ginger and fresh lemongrass to make you this perfect combination. You could heat this up with coconut milk, curry spice to make a Habibi’s Thai curry sauce.
Ingredients
4 Chicken Breasts, diced
1 tbsp peanut butter
1/4 cup soy sauce
1/4 cup lime juice
1/2 tbsp honey
1/2 tbsp curry powder
1 clove garlic, pressed
Red pepper flakes
Rice
Can Coconut Milk
Avocado, sliced
Red Cabbage, diced
4 carrots, diced
Cilantro
Habibi’s Thai Chili Hummus
Method
Combine all chicken marinade ingredients. Marinate for 20 minutes to overnight. Heat frying pan to medium heat, add chicken along with marinade and sauté until cooked through and slightly caramelized.
Meanwhile, cook rice according to package directions. For liquid use half water and half coconut milk.
Build your bowl by adding rice as your base and topping with chicken, sliced avocado, diced cabbage, carrots and cilantro for garnish. Dollop spoonful’s of Habibi’s Thai Chili Hummus on top and mix in.
