This is not you typical store bought tsatziki...
This amazing yogurt dip combines all the wonderful flavours from the Middle East- garlic, cucumber, lemon, onions, Greek yogurt and Zaatar spice to give you a slice of food heaven.
2 Large Zucchinis
1/2 Cucumber, diced
Cherry Tomatoes, diced
Kalamata Olives, pitted
1/4 Cup Red Onion, thinly sliced
1 Red Pepper, diced
2 Tbsp Lemon Juice
2 Tbsp Olive Oil
2 Tbsp Greek Seasoning
Salt and Pepper to taste
Habibi' Tsatziki to finish
Using a spiralizer, spiralize zucchinis into noodle-like strands. Twirl zucchini onto individual plates in a nest-like formation. Place a mixture of diced cucumbers, cherry tomatoes, red peppers, olives and onions in the nest. Whisk together dressing ingredients. Drizzle over nests. Finish off with several dollops of Habibi’s Tsatziki.
